Running the 0-degree adjuster gives you the baseline front geometry to work from, and it's the reference point when you're comparing offset adjusters back-to-back at a test day. Keeping the neutral adjuster in the toolbox means you can always return to a known setting when a setup experiment goes the wrong way.
